Simple After School Snacks

The hour or so before dinner is never easy. Backpacks drop by the door, someone opens the fridge hoping for something good, and a meltdown can start before dinner is even close to ready. Have a quick ready-to-go snack can help! With summer ending and school back in session, now is a good time to think about what to keep on hand.
Cut fruit is the easiest choice. Blueberries and grapes just need a rinse. Strawberries get hulled and halved. A peach gets sliced into wedges, and watermelon gets cut into small pieces. Put it all on one plate, and it usually disappears fast and is satisfying.

Vegetables take a little more work to prepare, but still end up being satisfying and can be prepped beforehand. Cut up celery and cucumber, add some baby-cut carrots and cherry tomatoes, and you’re set. Serve it all with hummus for dipping. Kids will eat some and skip others, but a few bites still count.

Dates feel like a treat, even though they’re fruit. Split one open and take out the pit. Fill it with a spoonful of cream cheese, a drizzle of honey, and some crushed pistachios and it’ll tastes like dessert. Rice cakes work the same way, just faster. Spread on peanut butter and add a few blueberries or other sliced fruit.

Some days, there’s no time for a plate or a knife. Solely’s fruit jerky works well then. It comes in mango, raspberry, and pineapple, and it’s easy to pack or hand over.
